Being a Christian family, we truly try our hardest to get up on Sunday mornings to get to church. But, sometimes, it just ain’t happenin’.
Between the onslaught of allergies and head colds that have hit our family the past couple of weeks, Sunday morning has been a true day of rest. Back in the day (a couple of years ago when it was just me, Terry, and Trystan), I used to go all out in making a Sunday breakfast with the works. Pancakes, eggs, sausage, bacon, grits, biscuits, and fresh fruit salad. Sometimes I would switch up the pancakes for french toast. Either way, it was a huge ordeal, that the boys grew to love.
Nowadays, they are lucky if I pour a bowl of cereal. I won’t say that I gave up on the whole idea of a big Sunday breakfast, but between illnesses and feeding 5 other mouths, it grows a bit tedious. Plus, every now and then, it would be great if I was treated to a big breakfast, not just the adorable peanut butter toast and coffee on Mother’s Day.
So, I went in search of some good breakfast ideas that won’t take forever and a day in the kitchen (but sound like they do!) and that my picky eaters will eat (if it sounds too gourmet, the kids won’t touch it, regardless of how delicious it is…don’t get me started on the Smoked Salmon Frittata).

PANCAKES
A stack of Oatmeal Pancakes with Dates and Walnuts is sure to start things off right—especially when generously drizzled with Banana-Butterscotch Syrup. I make mine bigger than the recipe called for so we ended up with about 12 instead of 20.
WAFFLES
Tender slices of apple are hidden in oh-so-fluffy Apple Waffles, which are perfectly complemented by a pat of melting butter or a touch of syrup. The boys flipped over this one. After the first batch, we started add apple pie spices like cinnamon and nutmeg. One word… WOW.
FRENCH TOAST
Skewered (optional) French Toast Bites with Blueberry Sauce are tossed in cinnamon sugar while still warm, creating a fun breakfast both kids and adults will love.
OATMEAL
And by far the simplest but greatest version of flavored oatmeal ever! Maple-Hazelnut Bruleed Oatmeal pumps up a morning favorite with maple syrup, hazelnut flavoring and a crunchy layer of caramelized brown sugar. Not to mention, I love anything bruleed!
